Vanilla Apricot Protein Bites

These little bites come together quickly, and are perfect for afternoon tea, or fun for a post workout pick-me-up. Packed with protein and healthy fats, these nutrient-dense treats are sure to satisfy
Ingredients
- 1 cup raw cashews
- 2/3 cup unsweetened dried apricots
- 1/4 cup plant based vanilla protein powder
- 2 tbsp coconut oil (solid, not melted)
Instructions
- In a food processor fitted with an āSā blade, grind the cashews and apricots until they are finely chopped, resembling a course meal.
- Add the protein powder, and blend again until well combined.
- Add the coconut oil in 4 separate chunks (not just one big glob), and pulse until the mixture comes together when pressed between your fingers. With clean hands, roll the dough into 12 balls. Place on a parchment lined plate and refrigerate until firm. Once firm, store in a mason jar or an airtight container in the freezer or refrigerator. They will keep for 6-7 days in the fridge.
