Super Easy Chickpea Salad

💛 Quick and Easy: Everything comes together in one bowl, and in just 10 minutes! This keeps well in the fridge for up to 5 days.
Ingredients
- 1 14oz can chickpeas, rinsed and drained (about 1 1/2 cups cooked chickpeas)
- 8 small grape tomatoes, sliced in half
- 1/2 English cucumber, peeled and diced
- 1/4 cup finely chopped parsley
- 1/4 cup Kalamata olives, pitted and sliced in half
- 1 clove garlic, minced
- 2 tbsp fresh squeezed lemon juice
- zest of 1/2 the lemon
- 1 tbsp olive oil
- 1/4 tsp pink Himalayan sea salt
Instructions
- Combine all ingredients in a large bowl and stir well.
- Divide evenly into 4 jars for meal prep. This keeps well covered and refrigerated for about 5 days. Shake the jar well before serving.
