Sesame Ginger Broccoli Salad

- 2 large heads of broccoli cut into florets, stems peeled and sliced (about 6.5 cups)
- 1-2 Tbsp Fresh Ginger, grated (use more if you like the flavor and heat of ginger)
- 1 tsp minced garlic (about 2 cloves)
- 2 Tbsp Sesame oil
- 2 Tbsp Olive Oil
- 2 Tbsp Rice Vinegar
- 2 Tbsp Low Sodium Tamari (gluten-free soy sauce)
- 1 Tbsp Honey or maple syrup
- Sesame seeds for topping
- Red Chile Flakes (for optional spice)
Instructions
- Steam the broccoli until crisp tender, about 6-7 minutes. Cool and place in a large bowl.
- In a separate small bowl, whisk together the grated ginger, garlic, sesame oil, olive oil, rice vinegar, tamari and honey until well combined.
- Pour over the steamed broccoli, mix well. Plate and top with sesame seeds, and red chile flakes if desired. Enjoy!
