Lemon Strawberry Chia Parfait

A creamy, dairy free lemony yogurt base, layered with fresh strawberries and granola for a nourishing, delicious breakfast.

Ingredients

  • 300g (about 1 and 1/3 cups) Forager Unsweetened Plain Cashew Coconut Yogurt
  • Zest and juice of 1 lemon
  • 2 teaspoons maple syrup
  • 1 tablespoon chia seeds
  • 2 scoops plant based vanilla protein powder (about 1/3 cup)
  • 1 cup fresh strawberries, sliced
  • 1/2 cup granola of choice

Instructions

  1. In a medium bowl, mix together the yogurt, lemon zest and juice, maple syrup, chia seeds, and protein powder until smooth and well combined.
  2. Cover and refrigerate overnight (or at least 4 hours) to allow it to thicken.
  3. In the morning give the mixture a stir. Layer it into two jars or glasses with sliced strawberries and granola.
  4. Serve immediately and enjoy!
  5. If you’re planning on eating it later, store the granola separately so it doesn’t get soggy.
  6. This will keep in the fridge for up to 3 days.
