Lemon Strawberry Chia Parfait

A creamy, dairy free lemony yogurt base, layered with fresh strawberries and granola for a nourishing, delicious breakfast.
Ingredients
- 300g (about 1 and 1/3 cups) Forager Unsweetened Plain Cashew Coconut Yogurt
- Zest and juice of 1 lemon
- 2 teaspoons maple syrup
- 1 tablespoon chia seeds
- 2 scoops plant based vanilla protein powder (about 1/3 cup)
- 1 cup fresh strawberries, sliced
- 1/2 cup granola of choice
Instructions
- In a medium bowl, mix together the yogurt, lemon zest and juice, maple syrup, chia seeds, and protein powder until smooth and well combined.
- Cover and refrigerate overnight (or at least 4 hours) to allow it to thicken.
- In the morning give the mixture a stir. Layer it into two jars or glasses with sliced strawberries and granola.
- Serve immediately and enjoy!
- If you’re planning on eating it later, store the granola separately so it doesn’t get soggy.
- This will keep in the fridge for up to 3 days.
