Lemon Blueberry Overnight Oats

Creamy overnight oats with bright lemon, juicy blueberries, and a boost of protein for the perfect make ahead, feel-good breakfast.

Ingredients

  • <strong>Overnight Oat Base</strong>
  • 2 cups unsweetened vanilla almond milk
  • 2 scoops plant-based vanilla protein powder
  • 4 teaspoons maple syrup
  • Juice of 2 lemons (about 2 tablespoons)
  • 1 tablespoon lemon zest (from 2 lemons)
  • ½ cup dairy-free yogurt (Greek yogurt if not dairy-free)
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons chia seeds
  • 2 cups gluten-free old-fashioned rolled oats
  • 1 cup fresh or frozen blueberries
  • <strong>Optional Toppings</strong>
  • ¼ cup slivered almonds
  • Extra dairy-free yogurt, fresh blueberries, almond butter, lemon zest

Instructions

  1. In a mixing bowl, or large tupperware, whisk together the almond milk, protein powder, maple syrup, lemon juice, yogurt, vanilla, cinnamon, and chia seeds until well combined and smooth.
  2. Stir in the oats and lemon zest. Transfer the mixture into four 16oz mason jars (for portioned out servings), or into one big tupperware. Evenly top with the blueberries. Refrigerate overnight (or 6-8 hours). In the morning top with slivered almonds, and other toppings of choice if desired. Enjoy!
