Homemade Almond Butter

Roasted is Better : Roasting almonds enhances their flavor and makes them blend more easily. This is our favorite way to enjoy almond butter! Be sure to let your almonds cool completely before process
Ingredients
- 1 pound of almonds, or approximately 3 cups, raw or roasted (We recommend roasted for maximum flavor)
- A pinch of salt (optional)
- 1-2 tsp avocado oil for an ultra smooth texture (optional)
- 1-2 tsp honey or maple syrup for a sweeter almond butter (optional)
Instructions
- If roasting, preheat your oven to 350°F. Spread the almonds on a baking sheet and roast for 10-12 minutes. Let them cool completely.
- Food Processor Instructions: Place the almonds in a food processor. Process them, pausing regularly to scrape down the sides. You're going to think that it will never blend, but be patient! The almonds will go from ground powder to clumps, then to a ball against the side of the food processor. Keep scraping down the sides and breaking up the ball. This will take about 15 minutes. If the mixture gets too hot along the way, stop and let it cool for a few minutes. Proceed to step 4.
- Blender Instructions: Make sure you are using a high speed blender with a tamper (Vitamix works great here). If roasting your almonds let them cool completely first. Turn your blender on high and use the tamper to push down on the almonds. Continuously push down on the almonds, particularly in the corners. In about one minute you will have almond butter. Caution: This is incredibly loud!
- Once the mixture becomes creamy and smooth, add optional ingredients if desired. If using raw almonds, add the avocado oil. Blend until super smooth and creamy.
- Transfer to an airtight container and store in the refrigerator.
