Ginger Lemon Fizz Mocktail

Ingredients
- 2 inches fresh ginger, grated (no need to peel)
- 2 cups filtered water
- 2 tsp honey (or add up to 1 tbsp for a sweeter version)
- Ice cubes
- 2 lemons, juiced (about ¼ cup total, or 2 tbsp per glass)
- 12 oz plain sparkling water or club soda
- <strong>For Garnish</strong>
- Sliced lemon, cucumber and rosemary sprigs
Instructions
- In a small saucepan, add the grated ginger and 2 cups of water. Bring to a boil, then reduce to a simmer, and set a timer for 10 minutes. When the time is up, turn off the heat, and carefully strain the liquid into a heatproof jar or cup. Stir in the honey until dissolved. Let cool to room temperature, or refrigerate until cool.
- Fill 2 large cocktail glasses with ice. Split the ginger syrup between the two glasses (about ¾ cup each glass). Add the freshly squeezed lemon juice into each glass (about 2 tablespoons per glass). Top with plain chilled sparkling water. Garnish with cucumber, a slice of lemon, and rosemary sprigs if desired.
