Epic Spaghetti Squash Burrito Bowls

Feel free to add your favorite toppings or swap out ingredients to make this dish your own. Use homemade beans, and guacamole for an extra fresh and delicious touch.

Ingredients

  • <strong>For the Spaghetti Squash</strong>
  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • <strong>For the Salad</strong>
  • 1/4 small green cabbage, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/4 cup chopped cilantro
  • Juice of 1/4 lime
  • Sea salt to taste
  • <strong>For the Beans</strong>
  • 1 can (15 oz) black beans or pinto beans, drained and rinsed, or 1 1/2 cups homemade beans
  • 1 teaspoon ground cumin
  • 1/2 teaspoon red chili flakes
  • Salt to taste
  • <strong>For the Bowls</strong>
  • 1/2 cup pre-made guacamole (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (200°C).
  2. Carefully cut the spaghetti squash in half lengthwise, and scoop out and discard the seeds.
  3. Drizzle the cut sides with olive oil and season with salt and pepper.
  4. Place the squash halves cut side down on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for about 35-40 minutes, or until the flesh feels tender and easily shredded with a fork.
  6. Remove from the oven and let cool until handleable. Once cooked and cooled, use a fork to scrape the flesh into spaghetti-like strands, and leave in their shells. Set aside.
  7. In a medium bowl, combine the thinly sliced cabbage, red bell pepper, and chopped cilantro.
  8. Squeeze the lime juice over the salad and season with sea salt to taste.
  9. Toss everything together until well mixed.
  10. In a small saucepan, heat the drained and rinsed beans over medium heat. If really dry, add 1-2 tbsp of water, or veggie broth.
  11. Add the ground cumin, red chili flakes, and salt to taste. Stir to combine and heat through.
  12. Keep the spaghetti squash strands in their shells, and gently press to one side.
  13. Divide the seasoned beans between the two shells, and top with the prepared salad.
  14. Add a generous dollop of guacamole on top of each bowl.
  15. Serve and Enjoy!
