This savory "toast" offers a hearty combination of creamy avocado, baby kale, a perfectly jammy egg, and microgreen sprouts. Delicious and satisfying, this toast is a great way to fuel your day!
Ingredients
- 1 large sweet potato, scrubbed clean (no need to peel), cut lengthwise into about 8 slices (aim for ½ inch thick)
- 1 whole avocado, sliced (¼ avocado per serving)
- 2 large handfuls baby kale (½ handful each toast)
- 8 soft-boiled eggs, 2 eggs per person (cooked for about 6-7 minutes for a jammy center)
- 1/2 cup Microgreen sprouts (2 tbsp each serving)
- Everything but the bagel seasoning
- Flaky sea salt and peppe
Instructions
- Preheat the oven to 400°F. Line a sheet pan with parchment paper. Place the sweet potato slices in a single layer, not touching or overlapping each other.
- Lightly spray sweet potato slices with olive oil and season with salt and pepper. Roast for 20-25 minutes, flipping halfway, until tender, golden, and cooked through. Set aside to cool a bit.
- Spread the avocado slices over the roasted sweet potato. Top with baby kale, the jammy egg (cut in half), microgreen sprouts, and a sprinkle of everything but the bagel seasoning. Add flaky sea salt and pepper to taste.
