Ingredients
- 1 pound garden or heirloom tomatoes, diced (about 6 medium small tomatoes)
- 1 English cucumber, diced (peeling is optional)
- 1 avocado, diced
- 2 tablespoons rice vinegar
- 1 tablespoon olive oil
- 1/4 teaspoon salt (or to taste)
- fresh ground black pepper (optional)
Instructions
- In a large bowl, add the diced tomatoes, cucumber, and avocado.
- Add the rice vinegar, olive oil, and sea salt. Gently stir to combine.
- Divide the salad between 4 bowls, and top with fresh ground pepper if desired.
- Enjoy promptly! This salad is best when served fresh. Leftovers may not keep so well.
