BBQ Tofu Power Bowls

A hearty, flavor-packed bowl with smoky BBQ tofu, roasted veggies, fresh spinach, and brown rice. Simple, satisfying, and perfect for a nourishing meal any day of the week!
Ingredients
- 1 block (14 oz) extra-firm tofu, pressed and cut into cubes
- ½ cup BBQ sauce, plus more for drizzling
- 2 bell peppers, sliced
- 1 zucchini, sliced into half-moons
- 2 tsp olive oil
- Sea salt and black pepper
- 2 cups cooked brown rice (½ cup per bowl)
- 4 big handfuls fresh spinach
- Salt & pepper, to taste
- <strong>Optional Sauce</strong>
- ¼ cup BBQ sauce
- 2 tbsp good-quality mayo, or vegan mayo (Primal Kitchen makes both a vegan and non-vegan mayo without seed oils)
Instructions
- Preheat the oven to 400°F and line two baking sheets with parchment paper.
- Toss the tofu cubes with ½ cup BBQ sauce and spread them out on one baking sheet, ensuring they don’t touch each other.
- On a separate baking sheet, toss the sliced bell peppers with 1 tsp olive oil, sea salt, and black pepper. Arrange them on one half of the pan. Toss the zucchini with the remaining 1 tsp olive oil, sea salt, and black pepper, then place them on the other half of the pan.
- Place both pans in the oven. Roast the zucchini and peppers for 15-20 minutes, until tender and lightly caramelized. Bake the tofu for 25-30 minutes, flipping halfway through, until the edges are slightly crisp.
- If making the optional sauce, stir together ¼ cup BBQ sauce and 2 tbsp mayo in a small bowl.
- To assemble, divide the cooked brown rice and fresh spinach among four bowls. Top with roasted veggies and BBQ tofu. Drizzle with extra BBQ sauce or the optional creamy sauce.
