Apple Crumble Overnight Oats

Creamy overnight oats layered with cinnamon spiced apples and a sweet nutty crumble, for the perfect cozy, fall breakfast.

Ingredients

  • <strong>Overnight Oat Base</strong>
  • <strong>In each jar put</strong>
  • ½ cups rolled oats
  • 2 teaspoons chia seeds
  • 2 teaspoons ground flax meal
  • 1 cup milk of choice
  • 1 tablespoon dairy free yogurt or yogurt of choice (plain or vanilla work well)
  • 2 teaspoons maple syrup (optional)
  • ½ teaspoon cinnamon or pumpkin pie spice
  • Small pinch sea salt
  • Once assembled, cover and refrigerate overnight.
  • <strong>Stewed Apple Layer (for 3 servings)</strong>
  • 1 medium apple, cored and diced small (peel is okay)
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon or pumpkin pie spice
  • 1 tablespoon water
  • Place all ingredients into a small pot on the stove. Cook over medium heat for about 5 minutes, stirring occasionally, until the apples are softened and golden. Cool completely, then transfer to a small container and refrigerate until ready to use.
  • <strong>Crumble Topping (for 3 servings)</strong>
  • 3 tablespoons oat flour
  • 3 tablespoons almond flour
  • 3 tablespoons rolled oats
  • 3 tablespoons finely chopped walnuts
  • 1 ½ tablespoons almond butter
  • 1 ½ tablespoons maple syrup
  • ¾ teaspoon pumpkin pie spice, or cinnamon
  • Pinch of sea salt
  • Place all ingredients into a small bowl and mix until combined and crumbly. The texture should hold together slightly when pressed between your fingers. Store in the fridge until ready to assemble.
  • <strong>Assembly</strong>
  • In the morning, layer each jar of oats with 1/3 of the stewed apples and 1/3 of the crumble. Add a spoonful of yogurt or a drizzle of nut butter if you like. For a warm breakfast, gently heat the oats and apples before topping with the crumble. Enjoy! 😊
